Tuna Mushroom Newburg



  • 1 large can of tuna packed in water
  • 2 tablespoons butter
  • 2 tablespoons of flour
  • 1 cup of milk
  • 1 box of mushrooms, sliced
  • 1 large clove of garlic
  • 2-3 anchovy fillets and some of the oil
  • 3 tablespoons of vermouth
  • 1 tablespoon of sherry
  • Salt and pepper


  1. Make cream sauce. Before adding flour saute garlic and anchovies in the butter. Add the flour and cook to get rid of raw flour taste. Add milk. Flavor with vermouth and sherry. Add one large can of tuna with liquid.
  2. Saute mushroom in butter and season with salt and pepper
  3. Add mushrooms to Newburg
  4. Serve over rice and serve with green salad.
