Tomato Salad

Fresh summer tomato
1 strip of bacon
Salt and pepper
Extra virgin olive oil
Sherry vinegar

1. Cut bacon into lardons

2. In a skillet add a little olive and fry lardons until barely crisp

3. Slice a clove of garlic and add to bacon sautéing until it begins to turn golden but not brown

4. Take lardons off the heat and add a little sherry vinegar

5. Cut tomato into chunks and put in bowl

6. Cut up a few scallions crosswise and add to tomatoes

7. Chop parsley and add to tomatoes

8. Season the salad with salt and pepper

9. Spoon lardons and the vinegar and oil from the pan over salad and toss

10. Serve with omelet and glass of wine
