Stuffed Tomatoes II

  • 2 medium sized tomatoes
  • 1 piece of sandwich bread
  • 1Tbsp. of olive oil
  • 1 tsp of dried basil
  • tbsp. of tapenade (see recipe in this blog)
  • 1 Tbsp. of grated parmesan
  • 1 Tbsp. of crumbled feta
  • Salt and pepper


1. Cut tops off tomatoes, remove pulp, and season with salt and pepper

2. Tear bread into pieces and turn into crumbs in small food processor

3. Put olive oil in small skillet and add crumbs. Brown and remove to a small bowl.

4. Add basil, parmesan, tapenade and crumbled feta to crumbs and mix

5. Stuff tomatoes with crumbs

6. Bake in 350 degree oven for one hour or until done.
