Southern Fried Cabbage

Southern Fried Cabbage

2 slices of thick bacon
Half a head of cabbage
Half of a large white onion
Half a teaspoon of garlic powder
1 Tbsp. of water

1. Slice bacon crosswise into ¼ inch lardoons and fry in skillet until fat is rendered and they begin to get crisp.
2. Roughly chip cabbage and onion and put in the skillet with the bacon.
3. Add garlic powder and salt and pepper to taste and a tablespoon of water, then toss and cover.
4. Cook for a couple of minutes. Do not overcook. Cabbage should retain some crunchiness.
5. Remove cover and continue to cook just long enough to evaporate any excess water if there is any.
6. Done. Provides 2 ample servings.
