Sautéed Brussel Sprouts with Bacon

Sautéed Brussel Sprouts and Bacon

2 slices of thick bacon
1 lb. of Brussel sprouts
1 Tbsp. of water

Slice bacon crosswise into ¼ inch lardoons and fry in skillet until fat is rendered and they begin to get crisp
Slice Brussel sprouts in food processor using the ¼ inch slicing blade
Put sliced Brussel sprouts into skillet with bacon and bacon fat
Add salt and pepper to taste and a tablespoon of water, then toss and cover
Cook for a couple of minutes. Do not overcook. Sprouts should retain crunchiness
Remove cover and continue to cook just long enough to evaporate any excess water if there is any
Excellent with roast pork and mashed potatoes
