Pork Loin-Bone in

  • 6 lb. pork loin
  • Tbsp. granulated sugar
  • Tbsp. of kosher salt
  • 2 Tsp of garlic powder
  • 2 Tsp of black pepper
  • 2 tsp. of dried thyme
  • 1 large clove of garlic


1. Take roast out of the ice box and let stand for a few hours to bring to room temperature

2. Mix first six ingredients above in small bowl to create a rub

3. Cut garlic into slivers, make deep slits in roast, and insert garlic slivers

4. Spread rub on roast and work in with your hands and let roast stand for a couple of hours at room temperature to absorb flavors

5. Place roast in shallow baking pan and put in 400 degree oven for fifteen minutes

6. Turn oven down to 350 and continue baking until total elapsed time is one hour and forty minutes

7. Remove from oven and let stand for 20 minutes before carving
