How to Roast Fresh Beets

Ingredients:

Beets
Aluminum foil
Directions:

1. Heat the oven to 375°F.

2. Rinse the beets and trim off any leafy tops. Wrap completely in aluminum foil and place in the oven (rack in middle position) and bake until tender and easily pierced with a knife ( 1 to 1 1/2 hours depending on the size of the beets)

3. Remove from the oven and let cool

4. Peel slipping skins off with your fingers or using a paring knife

5. Slice or quarter as required by recipe
