All-purpose Gravy


  • 2 tbsp of olive oil (or fat from roast)
  • 4 tbsp. of flour
  • 1 tsp of garlic powder
  • 1 tsp of pepper
  • 1 tsp of chili powder
  • 1 tsp of cumin
  • 1 can of beef broth (or homemade stock)
  • Deglazed pan drippings


1. Heat oil in sauce pan and add flour to make a roux. Cook stirring constantly for a few minutes to eliminate raw flour taste. (Approximate ratio of flour to oil to liquid:  2:4:2)

2. Add spices

3. Stir in deglazed pan drippings from roast if available

4. Heat beef broth in microwave for about 45 seconds

5. Add beef broth to roux and spices and stir until thickened

6. Add salt and thin with a little water if too thick

7. Simmer on low heat for 20 minutes
