Dressing the Board

This technique adds robust flavor to grilled or seared meats, particularly steaks.

1. On cutting board chop parsley and garlic

2. Add a little kosher salt and coursley ground or cracked pepper, and make semi-paste of the garlic and parsley by crushing together with the back side of your chef’s knife

3. Add some butter and smear the mixture around on the cutting board. This will be the base on which you place you cooked chops or steaks for carving

4. Slice and serve
