Cauliflower and Tomatoes with Parmesan Cheese

  • 1 head of cauliflower cut into flowerets
  • 1 lb. of ripe tomatoes, seeded and juiced
  • Salt and pepper
  • Ritz cracker crumbs
  • Parmesan or pecorino cheese
  • 1 Stick of melted butter


1. Blanch cauliflower in salted water for a few minutes and drain

2. Cut up tomatoes and arrange in greased baking dish with cauliflower. season with salt and pepper

3. Season crumbs with salt and pepper and add cheese

4. Sprinkle crumbs over cauliflower and tomatoes

5. Drizzle with the melted butter and bake in a preheated 375 degree oven for about 30 minutes or until done

6. Serve at once with steak, chops, or burgers
